Picnic Meat Loaf Recipe

Ingredients
| Beef | 1 1/2 Pound, finley minced | |
| Sausage meat | 8 Ounce | |
| Bacon rashers | 2 , finely chopped | |
| Onion | 1 , finely chopped | |
| 1/2 green capsicum, grated | ||
| Salt | 1 3/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 1 cup soft breadcrumbs | ||
| Evaporated milk | 1 Cup (16 tbs) | |
| Eggs | 3 , boiled | |
Directions
Place steak and sausage meat into a mixing bowl.
Fry bacon with onion in a frying pan For 10 minutes.
Drain off fat and cool.
Add fried bacon and onion to meats, with salt and pepper.
Soak bread crumbs in evaporated milk and mix into other ingredients lightly until well blended.
Lift mixture onto a moistened board and flatten out a little down centre.
Place shelled hard-boiled eggs along centre.
Mold up each side of meat mixture over the eggs and press ends and top well together to seal.
Lift carefully and place, joined side down, in a greased baking dish, pat into an even shaped roll and bake in a moderate oven for 1 1/4 hours.
Baste with drippings from meat during cooking.
When cooked, cool and wrap in plastic or place in a sealed container, then store in refrigerator until picnic time.
