4 small zucchini, diced
1 large sweet red pepper, diced
2 (4 oz. each) cans chopped green chilies, drained
1 medium onion, chopped
2/3 cup olive or vegetable oil
1/4 cup fresh lime juice
2 Tbsp. cider vinegar
2 tsp. ground cumin
1 1/2 tsp. salt
1tsp. pepper
1/2 tsp. garlic
Directions
Toss corn, zucchini, red pepper, chilies and onion.
Mix remaining ingredients well.
Pour over vegetables and lightly toss.
