Ingredients

 
All purpose flour 2 1/2-3 cups
 
Egg white 1
 
Packaged active dry yeast 1
 
Parmesan cheese 1/4 cup
 
Sugar 1 tbsp
 
Onion 1/4 cup
 
Chicken 2 cups
 
Cheddar cheese 1 1/2 cups
 
Packaged spinach 300 gms
 
Sesame seeds 2 tbsp

Directions

Take the yeast in a mixer bowl.
Add 1 cup lukewarm water to dissolve the yeast.
Put in sugar, 1 tsp salt and 1 cup of flour.
Mix with an electric beater on low for 30 seconds.
Keep scraping the bowl continuously.
Whip on high for about 3 minutes.
Combine as much of the remaining flour as you can.
Empty it on a lightly floured surface.
Next, knead in adequate amount of the left over flour so as to make fairly soft dough.
In fact, to ensure that the dough is smooth and elastic, knead for about 3 to 5 minutes.
Cover and keep aside.
To make the filling, mix together cheese, chicken, onion and spinach.
Add to it 1/4 teaspoon of salt.
Roll the dough into a 16"x10" rectangle on a lightly floured surface.
Down centre third of dough, spread the filling laterally.
Gather the long edges together over filling and seal.
With the seam side down, arrange the filling on a lightly greased baking sheet.
Prepare a mixture of egg white and 1 tbsp of water.
Brush it on top.
Pepper with sesame seeds.
Bake in oven about for 40 minutes at 375°F.
Wait till the loaf sounds hollow when tapped.
For even better results, wrap up with foil for the last 10 minutes.
This is to avoid over browning of bread.
Bread is ready.
