Pickled Pigs Feet Recipe
Ingredients
| Pig feet with uppers- 4 good-sized, boiled | ||
| Vinegar- 1 quart, strong | ||
| Bay leaves | 4 | |
| Whole Cloves | 1 Tablespoon | |
| Cinnamon | 1 Tablespoon, broken | |
| Salt | 1/4 Cup (16 tbs) | |
| Pepper | 2 Teaspoon | |
| Onion | 1/2 | |
| Mace- 1 blade | ||
Directions
GETTING READY
1.Start by cleaning the feet carefully
MAKING
2.In a pot, place the feet and cover with hot water
3.Simmer the feet until the meat separates from the bones
4.Remove carefully with skimmer
5.In a stone jar, place the feet, make sure to remove the largest bones
6.Save the water for later use
7.Now heat vinegar with bay leaves, cloves, cinnamon, salt, pepper, onion and mace
8.Simmer again slowly for 45 minutes, but do not boil at any time
9.Remove cake of fat from top of cooking water from feet
10.Add about 1 quart of the water to vinegar, if vinegar is not very strong, use less water
11.Strain liquid through a sieve and pour over meat in jar
12.Chill in the refrigerator for 2 days
