Pickled Herring Platter Recipe

12 to 16 ounces chilled pickled herring
 
1 tablespoon vinegar (optional)
 
1 onion, thinly sliced
 
1/2 cup plain yogurt
 
2 cups cooked green beans
 
12 small new potatoes, boiled
 
2 tablespoons melted butter
 
Chopped fresh parsley leaves

Directions

Rinse herring with cold water; arrange on serving platter.
Sprinkle with vinegar.
Separate onion slices into rings; arrange over herring.
Top with yogurt.
Place hot green beans and potatoes on platter with herring.
Top vegetables with butter and parsley; serve at once.
