Vinegar Pickled Green Beans Recipe

Ingredients
2 lbs. fresh green beans
1 1/2-cups water
1 1/3-cups white vinegar
1 tblspn, mustard
4 tspn, salt seed
2 chopped cloves garlic
3 medium onions
1 tblspns, whole black
1 stick cinnamon
peppercorns 3/4-cup sugar
Directions
String and cut green beans into 2" diagonal pieces.
Cook with onions in salted water until tender (about 20 mins.) and drain.
Tie spices and chopped garlic in a cheesecloth bag, submerge in vinegar solution, cover, bring to the boil and simmer for 15 minutes.
Continue simmering while quickly packing one hot, sterilised jar at a time.
Fill to within l/8th" from top, making sure solution covers vegetables.
Seal jars at once.
Makes about 2-4 pints
