Ingredients

 Cucumbers2 Medium
 White rice vinegar1/4 Cup (16 tbs)
 Lime juice3 Tablespoon
 Sugar1 Tablespoon
 Salt1/4 Teaspoon
 1 red chili pepper, seeded and sliced, or 1/4 teaspoon crushed red pepper
 Red onion1/4 Cup (16 tbs), finley chopped
 Lettuce leaves

Directions

Score cucumbers lengthwise; cut cross wise into 1/8 inch thick slices.
In a small saucepan combine the vinegar, lime juice, sugar, salt, and red pepper.
Bring to boiling; reduce heat.
Simmer for 2 minutes.
Remove from heat.
Pour over cucumber slices and toss to coat.
Cover and chill till serving time.
Before serving, stir in red onion, if desired.
Using a slotted spoon, transfer the cucumber mixture to a lettuce lined plate.
