Pickled American Jerusalem Artichokes Recipe
Ingredients
2 1/2 cups Jerusalem artichokes, chopped
1/2 clove garlic, minced
1 cup cider vinegar
1 cup green pepper, diced
1 teaspoon dill seeds
1 cup sweet red pepper, diced
2 1/2 teaspoons salt
3 tablespoons honey
1 cup onion, sliced
Directions
Put artichokes, peppers, onion and garlic in bowl.
Marinate with vinegar for 15 minutes.
Turn into saucepan, bring to boil and simmer gently about 45 minutes or until thickened, stirring frequently.
Add salt and honey.
Simmer an additional 5 minutes.
Pour to overflowing into hot sterilized jars.
