Pickled Small Onions Recipe
Ingredients
2 lbs. small pickling onions
1/3 c. pickling salt
Boiling water
1 tbsp. dry mustard
3 tbsp. pickling salt
3 tbsp. sugar
4 c. vinegar
1/4 c. mixed pickling spice
1 ginger root €” broken
2 c. sugar
Directions
1. Peel the onions, then place in a bowl.
2. Mix 1/3 c. salt well, through the onions.
3. Pour over the boiling water to cover, and let stand overnight.
4. Drain the brine from the onions.
5. Wipe onions dry by rubbing gently in a clean towel. Wipe out the bowl.
6. Return the onions to the bowl.
7. Combine the spices, vinegar and 3 tbsp. sugar, and pour over the onions. Mix well.
8. Place in a cool spot.
9. Each morning, add 2 tbsp. sugar to the pickles, and stir well.
10. Continue each day until the sugar is used.
11. Pack in sterilized jars, seal, and store in a cool place.
