Pickled White Onions Recipe

Ingredients

 
3 1/2 pounds small white onions
 
2 tablespoons mixed pickling spice
 
1 teaspoon crushed red pepper
 
4 cups cider vinegar
 
1 cup sugar
 
1 cup water
 
1 tablespoon salt

Directions

1. Peel onions, leaving a little of the root ends to help hold shape during cooking. Tie pick ling spice and crushed red pepper in small square of cheesecloth.
2. In 4-quart saucepan over high heat, heat spice bag, vinegar, sugar, water, salt, and onions to boiling. Reduce heat to low; cover and simmer 10 minutes. Discard spice bag. Ladle onions and their liquid into bowl; cover; refrigerate at least 12 hours to blend flavors.
