Ingredients
3 medium carrots
3/4 cup water
3/4 cup vinegar
1/3 cup sugar
3 inches stick cinnamon, broken
1 1/2 teaspoons mustard seed
1/4 teaspoon salt
1/4 teaspoon whole cloves
1 small sweet onion, thinly sliced and separated into rings
Directions
Peel carrots and cut in 2 1/2 to 3 inch lengths.
In small saucepan simmer carrots in a small amount of boiling water for 5 minutes.
Drain the carrots thoroughly; cut into thin sticks.
In saucepan combine the 3/4 cup, water, vinegar, sugar, stick cinnamon, mustard seed, salt, and whole cloves.
Simmer the mixture, covered, 10 minutes.
Strain liquid, discarding spices.
Combine carrots and onion rings in a bowl.
Pour hot mixture oyer.
Cool to room temperature.
Cover and refrigerate the mixture 8 hours or overnight.
Drain well.
