Ingredients

 1 small cauliflower, broken in tiny flowerets
 4 carrots, peeled, cut in 2-inch strips or julienned
 4 large long ribs of celery, in 1 inch pieces
 2 green peppers, cut in 2-inch strips
 White onions2 Small, thinly sliced
 Wine vinegar1/2 Cup (16 tbs)
 Salad oil1/2 Cup (16 tbs)
 Sugar1/4 Cup (16 tbs)
 Oregano leaves1 Tablespoon, chopped
 Water1/2 Cup (16 tbs)
 Salt To Taste
 Pepper To Taste

Directions

In large kettle, combine all ingredients.
Bring vegetables to a boil, stirring occasionally.
Reduce heat to simmer.
Cover pan and cook for 5 minutes.
Cool.
Store in refrigerator.
