Pickled Cucumber And Seaweed Salad Recipe

3 1/2 ounces wakame seaweed
 
1 cucumber, thinly sliced
 
1/2 teaspoon salt
 
1/2 cup white vinegar
 
2 tablespoons soy sauce
 
1 tablespoon shredded fresh ginger
 
1 tablespoon sugar
 
2 ounces minced clams

Directions

Soak the seaweed in cold water until it becomes tender. (Depending on the quality of the wakame, this will take 10 to 30 minutes.) Slice the cucumber, salt lightly, and let stand 30 minutes.
Drain liquid.
Cut the seaweed into 1 1/2-inch strips.
Mix together the vinegar, soy sauce, shredded ginger, and sugar.
Combine wakame, cucumber, and minced clams in a salad bowl.
