 Cucumbers5 Medium
 Chicken thighs2 Pound
 Sugar5 Tablespoon
 Distilled vinegar1/2 Cup (16 tbs)
 Shoyu1/2 Cup (16 tbs)
 1 tsp. ajinomoto
 Sesame oil1 Teaspoon
 2 Tbsps. white sesame seed
 Garlic2 Clove (5gm), grated
 Chili pepper3 To taste, chopped
 Green onion, minced

Directions

Night before, cut cucumbers into 1/2" x 1 1/4" lengthwise slices and soak in iced water for 20 minutes to crisp.
Boil chicken thighs in salted water for about 20 minutes.
Bone, shred and chop chicken into 1" pieces.
Drain cucumbers.
Mix remaining ingredients for marinade; add cucumbers and chicken.
Chill until time to serve.
