Ingredients

 Cucumber - 1 medium-sized
 Salt1 Teaspoon
 Sugar1 Tablespoon
 Red rice vinegar - 1 tablespoon
 Red chilli oil (optional) - 1/3 teaspoon
 Sesame oil - a few drops

Directions

GETTING READY
1. To prepare the cucumber split it, unpeeled, in half lengthwise, scrape off and discard the seeds and cut across into thick chunks.

MAKING
2. Sprinkle the cucumber with the salt, mix thoroughly and marinate for at least 10 minutes - longer if possible - then pour the juice away.
3. In a bowl mix with the sugar, vinegar and red chili oil (if using).

SERVING
4. Garnish with sesame oil and serve immediately.
