Ingredients

 Cider vinegar1/2 Cup (16 tbs)
 1/2 cup beet juice
 Honey1 Tablespoon
 Cloves2
 Salt1/2 Teaspoon
 Peppercorns3
 Bay leaf1/4
 Green onions2 Small, sliced
 2 1/2 cups cooked beets, sliced

Directions

Boil together vinegar and beet juice for a few minutes.
Add honey, cloves, salt, peppercorns and bay leaf.
Heat to boiling.
Pour over onions and beets and allow to cool.
