| 2 cups strained beet water | ||
| White vinegar | 1 Cup (16 tbs) | |
| Sugar | 1 Cup (16 tbs) | |
| Spice | 1 Teaspoon | |
| Chopped, peeled, cooked beets | ||
Directions
Bring beet water to a boil in saucepan.
Stir in vinegar and sugar.
Add pickling spice which has been tied in cheesecloth or placed in small strainer.
Stir in beets until covered by mixture.
Bring mixture to a boil, stirring occasionally.
Remove pickling spice.
Spoon into sterilized jars leaving 2 1/2 inch headspace; seal with 2-piece lids.
Process in boiling water bath.
