Pickled Albacore Recipe
Ingredients
| Albacore | 2 Can (10oz) | |
| Red onion | 1 Large, thinly sliced | |
| Green peppers | 2 To taste, sliced | |
| 2 oranges, halved and sliced | ||
| Olive oil | 1/4 Cup (16 tbs) | |
| Lemon juice | 1/2 Cup (16 tbs) | |
| Orange juice | 1 Cup (16 tbs) | |
| Bay leaves | 2 | |
| Oregano | 1/2 Teaspoon, crumbled | |
| Salt | 1/4 Teaspoon | |
Directions
Break albacore into large pieces.
Cover with slices of onion, green pepper, and orange.
Combine other ingredients and pour over fish.
Refrigerate for several hours.
Garnish with greens.
