Pick Me Up Cake Recipe
Ingredients
| Rum Cream or Egg-safe Rum Cream | ||
| Hot Espresso | ||
| 12 double ladyfingers (about 3 oz. total) | ||
| 1 ounce bittersweet or semisweet chocolate, finely chopped or grated | ||
Directions
Prepare Rum Cream and Hot Espresso.
Arrange ladyfingers, side by side, in bottom of a 9-inch quiche dish or shallow 1- to 1 1/2-quart dish.
Drizzle with espresso.
Let cool; top with Rum Cream and sprinkle with chocolate.
Cover and refrigerate for at least 1 hour or until next day.
