Piccalilli Recipe
If you want to be known as a chef, make a personal recipe of Piccalilli. I have done that myself. This Piccalilli makes a compelling Side Dish for most party meals. It is always prepared with a focus on Vegetable. Try this Piccalilli recipe and let me know what comes to your mind instantly after tasting it.
Ingredients
2 to 3 sweet green peppers
12 pounds green tomatoes
4 onions
1 cup salt
3 quarts vinegar
4 cups sugar
1 teaspoon ground ginger
1 teaspoon cinnamon
2 tablespoons mustard seed
1 cup grated horse-radish
Directions
Remove seeds from peppers.
Chop vegetables very fine.
Arrange vegetables in layers sprinkling each layer with salt and let stand overnight.
Drain and add remaining ingredients.
Cook until tender, stirring occasionally.
Pour into hot sterilized jars and seal.Instead of using the above ingredients use the following: 2 sweet red and green peppers, 4 cups chopped green tomatoes, 1 cup chopped celery, 2 large onions, 1 small head cabbage, 1/2 cup salt, 3 cups vinegar, 1 pound brown sugar, 1 teaspoon dry mustard and 1 teaspoon turmeric.
Prepare as above.
