Ingredients

 
Basmati Rice - 3 Cups
 
Cauliflower - 500 gms
 
Onions - 3 (finely chopped)
 
Ginger - 50 gms (finely grated)
 
Cloves - 3
 
Peppercorns - 3
 
Cinnamon - 1 piece
 
Bay leaves - 3
 
Turmeric Powder - 1/2 tsp
 
Ghee - 2 tbsp
 
Cumin seeds - 1 tsp
 
Salt - to taste

Directions

GETTING READY
1 Wash the rice well.
2 In a bowl, soak the rice in double the quantity of water for 1 hour.
3 Meanwhile, cut the cauliflower into small flowerets and wash well.

MAKING
4 In a large pan heat the ghee.
5 Add in the cumin seeds.
6 Add in the finely chopped onions and the grated ginger, fry well till the onions are golden brown.
7 Add in the cauliflower and fry well for a few minutes.
8 Add in the peppercorns, cloves, cinnamon, bay leaves, salt and turmeric powder and mix well.
9 Gradually add in the drained rice and fry for a minute.
10 Pour in the lef t over water in which rice was soaked.
11 Cover with a lid and simmer for about 15 minutes till the rice is well cooked.

SERVING
12 Serve hot.
