Phoenix-Tail Shrimps Recipe

Ingredients
1 pound medium-sized shrimps
1 egg
4 tablespoons water
4 tablespoons flour
1 teaspoon salt
Enough oil for deep frying
Pepper and salt mix
Directions
Shell the shrimps but keep the tails on.
Devein but be careful not to split them in two.
Beat egg, mix with flour, water and salt.
Heat a pan filled up to 1 inch of oil.
Dip each shrimp by the tail in the flour mixture and lower slowly into the boiling oil.
Fry on one side for 1 1/2 minutes and the other for another minute.
Remove from oil and drain for a few seconds on absorbent paper and serve immediately with side dishes of pepper and salt mix.
