Good call! We get the various cuts of beef paper thin. The Korean Market even carries the Japanese quality Shabu Shabu beef! You literally just pass through your soup one or twice and it cooks perfect-YUM! When we do it this way we serve the platter of thinly cut beef on the table with all the salad herbs for Pho.

One tip on slicing the beef really thin - stick it in the ice box for 20 minutes before you slice it up. It will not be as mushy and slice nice and thin!
