Recipe Story

Ingredients

 
Cooking oil – 2tbsp
 
Garlic – 1 clove (minced)
 
Shallots-1 tbsp
 
Shrimps – ¼ lb (you could even add chicken or pork instead)
 
Soy sauce – 1 tbsp
 
Noodles – 2 cups Sugar – 2 tbsp
 
Vinegar/ Tamarind juice – 2 tbsp
 
Fish sauce – 1 tbsp
 
Eggs -2
 
Spring onions – 2
 
Bean sprouts – 1 cup

Directions

Soak noodles in warm water and keep aside (approximately 3-5 minutes). Take a wok. Set heat at med-high. Add 2 tbsp cooking oil. Add garlic, shallots and stir for 10 seconds. Add shrimps and soya sauce. Fry till shrimps are done (about 1 min). Add the noodles and stir. Add sugar, vinegar/tamarind juice and fish sauce. Stir till noodles are fully cooked.

Push noodle to the side of the wok and add 1 tbsp of cooking oil. Break in the eggs and mix well till done. Toss the eggs with noodles. Mix well. Turn off the heat. Add bean sprouts and spring onions and mix well. Serve garnished with roasted ground peanuts.
