Pfeffernusse Recipe
Ingredients
| Whole wheat flour | 3/4 Cup (16 tbs) | |
| Unbleached flour | 3/4 Cup (16 tbs) | |
| 1/4 cup plus 2 tablespoons sugar | ||
| Baking soda | 3/4 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Ground cloves | 1/8 Teaspoon | |
| Ground white pepper | 1/8 Teaspoon | |
| Molasses | 1/4 Cup (16 tbs) | |
| 3 tablespoons plus 1 teaspoon apple juice | ||
| Walnuts | 3 Tablespoon, finely chopped | |
| Golden Raisins | 1/4 Cup (16 tbs), finely chopped | |
Directions
1. In a large bowl, combine the flours, sugar, baking soda, and spices, and stir to mix well. Add the molasses and apple juice, and stir to mix well. Stir in the walnuts and raisins.
2. Coat a baking sheet with nonstick cooking spray. Roll the dough into 1-inch balls, and place 1 1/2 inches apart on the baking sheet. Bake at 275 °F for about 18 minutes, or until lightly browned. Cool the cookies on the pan for 1 minute. Then transfer the cookies to wire racks, and cool completely.
