Ingredients

 Whole wheat flour3/4 Cup (16 tbs)
 Unbleached flour3/4 Cup (16 tbs)
 1/4 cup plus 2 tablespoons sugar
 Baking soda3/4 Teaspoon
 Ground cinnamon1/2 Teaspoon
 Ground cloves1/8 Teaspoon
 Ground white pepper1/8 Teaspoon
 Molasses1/4 Cup (16 tbs)
 3 tablespoons plus 1 teaspoon apple juice
 Walnuts3 Tablespoon, finely chopped
 Golden Raisins1/4 Cup (16 tbs), finely chopped

Directions

1. In a large bowl, combine the flours, sugar, baking soda, and spices, and stir to mix well. Add the molasses and apple juice, and stir to mix well. Stir in the walnuts and raisins.
2. Coat a baking sheet with nonstick cooking spray. Roll the dough into 1-inch balls, and place 1 1/2 inches apart on the baking sheet. Bake at 275 °F for about 18 minutes, or until lightly browned. Cool the cookies on the pan for 1 minute. Then transfer the cookies to wire racks, and cool completely.
