Recipe Story

The Petha of Agra is more than a century old. It has been an Indian favourite due to its medicinal properties and sublime flavour. The clustering of enterprises involved in the production of Petha sweet occurred in Agra due to the availability of raw fruit here and the fondness of the local people for sweets.

Directions

Cut ash gourd into half, remove skin and seeds and cut into pieces of desired size.
Prick them with a fork or any other pointed thing.
Place petha pieces in a large pan and pour sufficient water so as to just cover the pieces. Add alum powder and boil for about ten to fifteen minutes.
Remove from heat, drain and wash thoroughly under running water.
Combine sugar with one cup of water and heat till sugar dissolves.
Add lemon juice to remove scum, if any.
Reduce heat to medium and add boiled petha.
Continue cooking till pethas get softened and sugar syrup is of three-thread consistency.
Remove from heat, remove pethas and keep the pieces separately, so that they do not stick to each other.
Serve when cool.

Ash Gourd is a type of pumpkin, which normally grows on the thatched roof. In English, it is known as Green Pumpkin or White Gourd or Fuzzy Melon or Hairy Melon. This is a common vegetable grown in Southern and Eastern part of Asia.

I am not sure about calcium lime, but I have seen people using cream of tartar as a substitute for alim powder. In fact I have used it in some of my preparations too. But in this recipe, i think chef will only have to reply :)
