• 1 cup pine nuts
• 2 cups fresh basil
• 1 clove garlic, per person, smashed
• ¼ - ½ cup olive oil
• ½ cup parmesan cheese or goat cheese
• Salt and pepper
• Fish fillets
• Lemon juice

Directions for preparation:
• Cook the pasta.
• Toast the pine nuts and add a pinch of salt.
• Transfer the nuts to a blender/mixer.
• Add in the basil and garlic.
• Add the olive oil, cheese, and salt and pepper to taste. Blend well. (Add some of the pasta water to get the right pesto consistency)
• For the fish lay the fillets on a heavy duty aluminum foil on a cookie sheet.
• Season the fillets with olive oil, lemon juice and salt and pepper. Broil them for 7-10 minutes.
• Serve the children’s dinner with pasta topped with pesto.
• Serve the adult’s dinner with the fillets placed on the pasta and topped with the pesto.
• Garnish with some toasted pine nuts and grated parmesan cheese.
