Pesto Recipe

Ingredients
2 1/2 cups basil leaves
3 tbsp virgin olive oil
3 tbsp pine nuts
3 garlic cloves, chopped
Salt and pepper
Roasted pine nuts
Directions
Wash, then spin dry basil leaves.
In a large frying pan, heat 1 tbsp (15 mL) oil.
Cook pine nuts and garlic 30 seconds or until lightly browned.
Add basil.
While stirring, continue cooking until basil leaves are limp.
Remove from heat.
Add remaining oil.
Season with salt and pepper.
With a pestle or blender, puree mixture.
Garnish with roasted pine nuts.
