Peshawari Makai Bharta Recipe

Ingredients
250 g brinjal
100 g tomatoes
150 g onions
50 g ghee
5 g cummin (jeera) seeds
20 g ginger-garlic paste
200 g fresh corn kernels
5 g turmeric powder
15 g chilli powder
Salt to taste
20 g chaat masala
6 sprigs coriander leaves, chopped
10 g ginger, julienned
Directions
Roast the brinjal, tomatoes and onions on the gas or in a medium-hot oven.
Peel and chop them fine.
Heat the ghee in a kadai and add the jeera.
When it begins to crackle, add the ginger-garlic paste and saute for a minute or two.
Add the roasted and chopped vegetables, fresh corn kernels, turmeric powder, chilli powder and salt.
Saute until the masala starts to leave the oil.
Add the chaat masala and stir well.
Serve garnished with chopped coriander and juliennes of ginger.
