Ingredients
| Vegetable oil | 1 Teaspoon | |
| 1 chicken (3 1/2 pounds), skinned and cut up | ||
| Onion | 1 Cup (16 tbs), chopped | |
| Green bell pepper | 1 Cup (16 tbs), diced | |
| Garlic | 2 Teaspoon, minced | |
| Tomato | 1 , chopped | |
| 1 fresh jalapeno chili seeded and diced | ||
| Powdered saffron | 1/4 Teaspoon | |
| Low sodium chicken broth | 3 1/2 Cup (16 tbs) | |
| Bay Leaf | 1 | |
| Plums | 4 , quartered | |
| Cooked brown rice | 4 Cup (16 tbs) | |
Directions
Heat oil in large nonstick skillet until hot; add chicken pieces.
Cook about 12 minutes or until golden brown on all sides, turning often.
Add onion, bell pepper and garlic; cook and stir 2 minutes more.
Add tomato, chili, saffron, broth and bay leaf.
Bring to a boil; cover and simmer 10 minutes.
Stir in plums and rice; heat through.
Remove and discard bay leaf.
Cook about 12 minutes or until golden brown on all sides, turning often.
