 1 chicken (3 1/2 pounds), skinned and cut up

 Green bell pepper1 Cup (16 tbs), diced

 1 fresh jalapeno chili seeded and diced
 Powdered saffron1/4 Teaspoon
 Low sodium chicken broth3 1/2 Cup (16 tbs)
 Bay Leaf1
 Plums4 , quartered
 Cooked brown rice4 Cup (16 tbs)

Directions

Heat oil in large nonstick skillet until hot; add chicken pieces.
Cook about 12 minutes or until golden brown on all sides, turning often.
Add onion, bell pepper and garlic; cook and stir 2 minutes more.
Add tomato, chili, saffron, broth and bay leaf.
Bring to a boil; cover and simmer 10 minutes.
Stir in plums and rice; heat through.
Remove and discard bay leaf.
