Persian Rice Salad Recipe

Ingredients

 Long grain rice4 Cup (16 tbs)
 Ginger slice2 , finely chopped
 Ground coriander2 Teaspoon
 Ground cumin2 Teaspoon
 Nutmeg1/2 Teaspoon
 6 green shallots, finely chopped (including some of green tops)
 1/2up each raisins, sultanas and dried apricots
 Orange rind1 Tablespoon, grated
 Toasted pine nuts1/2 Cup (16 tbs)
 Olive oil1 Cup (16 tbs)
 Ground black pepper1 To taste
 12 dried apricots, poached in water for 3-4 minutes
 Toasted pine nuts
 Salt To Taste

Directions

Cook rice, 2 cups at a time, in plenty of boiling salted water for 15 minutes. Drain well. Cut apricots in thin slices. Place warm rice in a large bowl and add remaining ingredients, seasoning with salt and pepper. You need just enough oil to moisten rice without making it mushy, so add it gradually. Serve salad warm or at room temperature, garnished with apricots and nuts
