Persian Rice Salad Recipe
If you want a yummy salad to serve for your party then Persian Rice Salad is the one for you! I often make it as a surprise treat for my guests! Try making this addictive Persian Rice Salad!
Ingredients
| Long grain rice | 4 Cup (16 tbs) | |
| Ginger slice | 2 , finely chopped | |
| Ground coriander | 2 Teaspoon | |
| Ground cumin | 2 Teaspoon | |
| Nutmeg | 1/2 Teaspoon | |
| 6 green shallots, finely chopped (including some of green tops) | ||
| 1/2up each raisins, sultanas and dried apricots | ||
| Orange rind | 1 Tablespoon, grated | |
| Toasted pine nuts | 1/2 Cup (16 tbs) | |
| Olive oil | 1 Cup (16 tbs) | |
| Ground black pepper | 1 To taste | |
| 12 dried apricots, poached in water for 3-4 minutes | ||
| Toasted pine nuts | ||
| Salt | To Taste | |
Directions
Cook rice, 2 cups at a time, in plenty of boiling salted water for 15 minutes. Drain well. Cut apricots in thin slices. Place warm rice in a large bowl and add remaining ingredients, seasoning with salt and pepper. You need just enough oil to moisten rice without making it mushy, so add it gradually. Serve salad warm or at room temperature, garnished with apricots and nuts
