Persian Rice Salad Recipe

 Long grain rice4 Cup (64 tbs)
 Fresh ginger slice2 , finely chopped
 Ground coriander2 Teaspoon
 Ground cumin2 Teaspoon
 Nutmeg1⁄2 Teaspoon
 Green shallots6 , finely chopped (Including Some Of Green Tops)
 Raisins1⁄2 Cup (8 tbs)
 Sultanas1⁄2 Cup (8 tbs)
 Dried apricots1⁄2 Cup (8 tbs)
 Grated orange rind1 Tablespoon
 Toasted pine nuts1⁄2 Cup (8 tbs)
 Olive oil1 Cup (16 tbs)
 Ground black pepper To Taste
 Salt To Taste
 Dried apricots12 , poached in water 3-4 minutes (For Garnish)
 Pine nuts2 Tablespoon (For Garnish)

Directions

Cook rice, 2 cups at a time, in plenty of boiling salted water for 15 minutes. Drain well. Cut apricots in thin slices. Place warm rice in a large bowl and add remaining ingredients, seasoning with salt and pepper. You need just enough oil to moisten rice without making it mushy, so add it gradually. Serve salad warm or at room temperature, garnished with apricots and nuts
