Very fresh young spinach - 1 1/4 lb
 
Shallot - 1 medium sized or
 
Small Bermuda onion - 1/2
 
Natural yogurt - 1 cup
 
Fresh lime juice - 3 tbsp
 
Fresh mint - 3 tsp, chopped, or
 
Dried mint - 1 tsp
 
Salt
 
Black pepper

Directions

GETTING READY
1 Trim and wash the spinach.

MAKING
2 In a large saucepan, bring salted water to a boil.
3 Add the spinach leaves to the saucepan.
4 Blanch for 2 minutes.
5 Drain well and allow to cool.
6 Gently squeeze out as much moisture as possible from the spinach a handful at a time.
7 Chop very finely.
8 In a mixing bowl, place the spinach.
9 Slice the peeled shallot or Bermuda onion very finely.
10 In a small bowl, mix the shallot or Bermuda onion with the yogurt.
11 Add 1 tsp salt, lime juice, and a little freshly ground pepper.
12 Stir this yogurt dressing into the spinach.
13 Cover, and chill for 2 hours in the refrigerator.

SERVING
14 Transfer into a chilled salad bowl just before serving.
15 Sprinkle with the mint.
