Perfection Salad Recipe
The perfection salad is a lovely gelatin and egetable salad. A congealed salad, it has added olives and is flavored with vinegar and sweetened to taste. Chilled and served as desired, it is refreshing and delicious.
Ingredients
| 2 envelopes unflavored gelatin | ||
| Cold water | 1 1/2 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Water | 1 1/2 Cup (16 tbs) | |
| Vinegar | 1/2 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| 1 1/2 cups finely shredded cabbage | ||
| Celery | 3/4 Cup (16 tbs), sliced | |
| Shredded carrot | 1/2 Cup (16 tbs) | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
| 1/2 cup sliced pimiento stuffed olives | ||
Directions
Sprinkle gelatin over 1 1/2 cups cold water in a saucepan; let stand 1 minute.
Add sugar and salt; cook over low heat, stirring until gelatin dissolves.
Stir 1 1/2 cups water, vinegar, and lemon juice into gelatin mixture; chill until consistency of unbeaten egg white.
Fold in remaining ingredients; pour into a lightly oiled 5 cup mold.
Cover and chill until firm.
Add sugar and salt; cook over low heat, stirring until gelatin dissolves.
