Perfect Parsnip Patties Recipe
Ingredients
| Parsnips | 6 , cooked | |
| Whole wheat flour | 2 Teaspoon (To taste seasoning without salt) | |
| 1/2 cup low-fat yogurt | ||
Directions
1. Wash, peel, and quarter parsnips. Remove core and discard. Cook parsnips in boiling water for 15 minutes or until tender.
2. Drain and mash. Use cooking water to adjust consistency. Season.
3. Whisk flour into yogurt. Stir into seaisoned parsnips.
4. Shape into 8 patties and brown slowly on a nonstick griddle or skillet. Turn once. They should have a crisp crust.
