Perch In Creamy Fennel Sauce Recipe
Ingredients
1/3 cup bread crumbs
1/3 cup rye flour
Salt and pepper
2 lbs perch fillets
1/4 cup butter or margarine
Sauce
1/3 cup fennel, finely chopped
1 cup heavy cream
1 tbsp soy sauce
Directions
Sprinkle a sheet of wax paper with bread crumbs, flour, salt and pepper.
Dredge fish with mixture.
In a frying pan, melt butter.
Over moderate heat, lightly brown fish.
Remove fillets from pan.
Keep warm.
In the same pan, add fennel and cream.
Simmer until sauce thickens.
Fold in soy sauce.
Adjust seasoning.
Pour sauce over a serving dish.
Place fish on top.
