Perch Recipe

Ingredients
2 pounds perch
1/4 cup flour
2 tablespoons shortening
Salt and pepper to taste
1/2 cup water
Directions
Thoroughly coat the fish in flour.
Add shortening to cooker and brown the fish on all sides.
Remove from cooker.
Place rack in cooker and put perch on rack.
Season with salt and pepper.
Add water and close cooker.
Put regulator in place and, when pressure is reached, cook for 10 minutes.
Cool cooker at once.
Serve.
