Peppery Oven Fried Chicken Recipe
Ingredients
| Butter | 3 Tablespoon | |
| Vegetable oil | 2 Tablespoon | |
| 2/3 cup unseasoned dry bread crumbs | ||
| Flour | 1/3 Cup (16 tbs) | |
| 1 teaspoon coarsely ground black pepper | ||
| Salt | 3/4 Teaspoon | |
| Cayenne | 1/2 Teaspoon | |
| 4 pounds chicken parts | ||
Directions
1. Preheat oven to 400°F. Place butter and oil in a large baking dish, at least 9x13 inches, and set in oven to melt butter.
2. In a plastic bag, combine bread crumbs, flour, black pepper, salt, and cayenne. Roll chicken in melted butter and oil, then shake a few pieces at a time in bread crumb mixture until coated. Place, skin side up, in baking dish.
3. Bake until browned and crisp and chicken juices run clear when pricked, 40 to 45 minutes.
