Peppery Dill Beans Recipe

2 1/2 pounds green beans
 
6 1/2-pint canning jars and caps
 
2 1/2 cups white vinegar
 
2 cups water
 
1/4 cup salt
 
1 garlic clove
 
6 dill sprigs
 
3/4 teaspoon crushed red pepper

Directions

1. Cut beans 1/4 inch shorter than height of canning jar (save ends for soup another day).
2. Prepare jars and caps for processing
3. In 2-quart saucepan over high heat, heat vinegar, water, salt, and garlic to boiling. In each hot jar, place 1 dill sprig and 1/8 teaspoon crushed pepper. Pack beans tightly into jars. Discard garlic and immediately ladle simmering liquid over beans to 1/4 inch from top. Close jars as manufacturer directs. Process jars in boiling-water bath
