Ingredients
6 green peppers
Boiling salted water
2 cups cooked elbow macaroni
1 egg
1 cup commercial sour cream
2 teaspoons prepared mustard
1/4 teaspoon salt
1 tablespoon grated onion (optional)
1/4 pound (1 cup) shredded sharp Cheddar cheese
Directions
Cut tops off peppers and remove seeds; parboil in salted water for 3 minutes; drain.
Stand green peppers in baking pan, then stuff with half of macaroni.
Beat egg slightly, then mix with sour cream, mustard, salt, and onion.
Pour half of sour cream mixture over macaroni and sprinkle with half of the shredded cheese.
Spoon remainder of macaroni into peppers, pour in remaining sour cream mixture, and sprinkle with remaining cheese.
Bake in a moderate oven (350°) for 30 minutes
