Peppers Frt Potatoes Recipe

 Margarine2 Tablespoon
 Pepper red1 Cup (16 tbs), sliced
 Green pepper1 Cup (16 tbs), sliced
 Onion1 Cup (16 tbs), chopped
 Garlic1 Clove (5gm), minced
 2 packets Weight Watchers chicken broth and seasoning mix
 Pepper1/8 Teaspoon
 1 lb. 2 oz. new potatoes, thinly sliced
 Parsley

Directions

Heat margarine until bubbly.
Add peppers, onion and garlic.
Saute until softened.
Stir in 1 1/2 cups water, broth and pepper.
Bring to a boil.
Reduce heat to low.
Stir in potatoes.
Let simmer, stirring occasionally, until done, approximately 15 to 20 minutes.
