Peppers And Tomatoes Recipe
Ingredients
1 med onion, chopped
2 cloves garlic, minced
1 tsp vegetable oil
1 cup green pepper, sliced into sticks
1/2 cup sweet red pepper, cut into chunks
5 tomatoes, cored and quartered
1 bay leaf
2 71 fresh parsley, chopped
Directions
In a heavy pan, saute onion and garlic in the oil until golden brown.
Add peppers.
Reduce heat, cover and cook 5 minutes.
Add tomatoes and bay leaf.
Cover and cook for 5 minutes longer.
Pour into serving dish.
Season with salt and pepper.
Garnish with parsley.
