Pepperoni Stuffed Scallops Recipe

 12 sea scallops (about 1/2 lb.) 1 1/2 inches
 6 thin slices pepperoni, cut in half
 6 garlic Melba cracker rounds, finely crushed
 Parmesan cheese1 1/2 Teaspoon, grated
 Parsley flakes1/4 Teaspoon, dried
 Pepper1 Dash

Directions

Cut a lengthwise slit in center of each scallop, but do not cut completely through.
Stuff each scallops with pepperoni half.
Arrange scallops in circular pattern on paper towel-lined plate.
Set aside.
