Ingredients

 Onion1 Medium, thinly sliced
 Pepperoni8 Ounce, thinly sliced
 Bleu cheese1/4 Cup (16 tbs), crumbled
 Salad oil2/3 Cup (16 tbs)
 Cider vinegar1/3 Cup (16 tbs)
 Ground pepper1 To taste
 10 ounces fresh spinach, washed thoroughly, dried and chopped
 Iceberg lettuce head1/2 , chopped
 Salt To Taste

Directions

One day before serving, separate onion slices into rings and place in large bowl; add pepperoni slices and bleu cheese.
Add oil, vinegar, salt and pepper.
Toss in the spinach and lettuce.
Chill salad overnight in covered bowl.
