Peppernuts Recipe
Ingredients
| 1 c. old-fashioned molasses | ||
| Brown sugar | 1 Cup (16 tbs) | |
| 1 c. non-hydrogenated lard or shortening | ||
| Cloves | 2 Tablespoon | |
| Cinnamon | 1 Tablespoon | |
| Anise seed | 1 Tablespoon | |
| Nuts | 1 Cup (16 tbs), chopped | |
| 2 t. baking soda, dissolved in 1 t. water | ||
| Soy flour | 1/2 Cup (16 tbs) | |
| Nutritional yeast | 1 Tablespoon | |
| Whole wheat flour | 2 Cup (16 tbs) | |
| Unbleached flour | 1 1/2 Cup (16 tbs) | |
Directions
Preheat oven to 300°.
Thoroughly cream molasses, sugar, and lard.
Mix in spices, then the rest of the ingredients until thoroughly blended.
If dough is not stiff enough, add more flour.
With floured hands, roll into balls approximately 1-inch diameter.
Bake for 10 minutes or until lightly browned.
Cool thoroughly on wire rack.
