Peppered Turkey Sausage Recipe
Ingredients
| Ground turkey | 1/2 pound | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Sweet red pepper | 1/4 Cup (16 tbs), chopped | |
| 1 1/2 teaspoons low-sodium soy sauce | ||
| Pepper | 1/2 Teaspoon | |
| Sage | 1/4 Teaspoon, rubbed | |
| Salt | 1/8 Teaspoon | |
| 2 to 3 feet pork sausage casing | ||
| Vegetable cooking spray | ||
Directions
Position knife blade in food processor bowl; add first 7 ingredients.
Process until well blended; set aside.
Rinse pork casing thoroughly with warm water; drain.
Tie one end of casing securely with cotton string.
Insert a large, wide-mouth tip into a large pastry bag.
Fill bag with sausage mixture.
Slip open end of casing over tip of bag.
Pipe sausage mixture into casing, using hand to force mixture evenly into casing.
Tie open end of casing to close.
Twist sausage into 4 equal lengths; tie between lengths with string.
Cut sausage into links.
Place links in a large skillet; add water to a depth of 1 inch.
Bring to a boil; cover, reduce heat to medium, and cook 20 minutes or until sausage is done, turning occasionally.
Drain links on paper towels.
Wipe skillet dry with a paper towel.
Coat skillet with cooking spray.
Return links to skillet, and cook over medium heat until browned, turning occasionally.
