Ingredients
4-lb. sirloin steak, cut 2 inches thick
1 tbsp. coarsely-cracked pepper
Salt
Directions
Score fat on the edge of the steak.
Sprinkle both sides with pepper, pressing it into the meat well with the heel of the hand.
Let stand at room temperature 1 hour.
Broil steak to desired doneness: 12 to 15 minutes per side for rare, 18 minutes per side for medium, 20 minutes per side for well done.
(If you want the steak well browned outside and verv rare inside, have the top of the steak 3 inches from the heat. If you are cooking it to well done, lower the pan to just above the middle of the oven so steak cooks through without burning.)
Season well with salt and put on hot platter.
Cut meat free from bone then slice in strips across the grain, slanting cuts slightly from top to bottom of steak.
