Pepper Salad Recipe

Knockout anyone and everyone with this kick ass Pepper Salad recipe. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. Believe me, just try this Pepper Salad once, you'll love it.

Ingredients

 
2 medium size green peppers
 
3 large summer-ripe tomatoes, sliced
 
3 scallions, finely chopped
 
1/2 teaspoon salt
 
Freshly ground black pepper
 
1/2 teaspoon basil
 
2 tablespoons red wine vinegar
 
6 tablespoons olive oil
 
3 tablespoons chopped chives

Directions

Cut the green peppers into strips and cover with boiling water.
Cook on the highest setting for 2 minutes.
Drain and rinse immediately under cold running water.
Arrange the green pepper strips and tomato slices in a serving dish and sprinkle with scallions.
Combine all the remaining ingredients and pour over the salad.
