Pepper Relish Recipe
Ingredients
4 lb medium red peppers (about 12)
4 lb medium green peppers (about 12)
6 hot peppers (optional)
3 lb onions
Boiling water
2 cups white vinegar
2 cups sugar
3 tablespoons salt
Directions
Wash and dry vegetables.
Remove seeds and cores from peppers; peel onions.
Chop all coarsely.
Turn into 10-quart kettle; cover with boiling water; let stand 5 minutes; drain.
To vegetables in kettle, add vinegar, sugar, and salt.
Bring mixture to boiling; boil 5 minutes; let cool.
Store, covered, in refrigerator.
Serve with ham- burgers and hot dogs.
