Pepper Onion Relish Recipe

Ingredients
2 quarts chopped green pepper
2 quarts chopped sweet red pepper
11/2 cups chopped onion
2 teaspoons mixed whole pickling spices
1 hot red pepper
11/2 cups vinegar (5% acidity)
3/4 cup sugar
2 teaspoons salt
Directions
Combine first 3 ingredients in a large bowl.
Add enough boiling water to cover; let stand 5 minutes.
Drain.
Cover again with boiling water; let stand 10 minutes, and drain.
Tie spices and hot pepper in a cheese cloth bag.
Combine spice bag, vinegar, sugar, and salt in a; Dutch oven; bring to a boil.
Reduce heat and simmer, uncovered, 15 minutes.
Add vegetables, and simmer 10 minutes.
Remove spice bag, and bring mixture to a boil.
Quickly spoon relish into hot sterilized jars, leaving 1/4'-inch headspace; cover at once with metal lids, and screw bands tight.
Process in boiling-water bath 5 minutes.
