Ingredients

 
3/4 cup all-purpose flour 175 mL
 
1/3 cup yellow cornmeal 75 mL
 
1 tbsp firmly packed light brown sugar 15 mL
 
2 tsp baking powder 10 mL
 
1/2 tsp salt 2mL
 
1/2 cup skim milk 125 mL
 
1 egg
 
1/3 cup margarine, melted 75 mL
 
11/2 cups shredded zucchini 375 mL
 
1/2 cup chopped roasted red peppers 125 mL

Directions

In a large bowl, combine flour, cornmeal, sugar, baking powder and salt.
Make a well in the center.
In another bowl, whisk together milk, egg and melted margarine.
Add to dry ingredients, stirring just until moistened and blended.
Do not overmix.
Stir in zucchini and peppers.
Spoon batter into prepared muffin tin.
Bake in preheated oven for 20 to 25 minutes.
